These knives are made with AEB-l Stainless carbon steel. AEB-L is well known for its toughness and durability. This knife is a Japanese design for use in vegetable prep. Unlike the Chinese cleaver it is very light and thin for delicate work.

The blade tapers from 3/16 down to .04 in. Great for paper thin slices.
