This kitchen knife is made from AEBL, a stainless steel with a high toughness and good edge retention. The hardness is between 60.5 and 61rc. This steel can be sharpened with normal waterstones. I prefer ceramic or diamond stones myself.

The handles are a mix of woods, stone, and modern resins, this will vary handle to handle. All handles are finished with a wax and oil mix. I recommend waxing the handle every so often. any hardening wax will do. I prefer carnauba wax.
